Author NEMO shares the natural vegan nature of preserves in the book “Sweet Preserves.”
THE SYNOPSIS

Sweet preserves are vegan almost by nature: fruit, sugar, pectin. Choose a pectin of plant origin (the animal-derived kind is the one presence to steer clear of in industrial versions) and the whole tradition is already available to you.
Five chapters: jams and marmalades, fruit jellies, artisan candied fruit, aromatic syrups and coulis, fruit curds and butters. With the sterilising instructions that make the difference between a preserve that lasts a year and one that lasts a month.
THE REVIEW
This was a unique and engaging entry in this cookbook series. Interestingly, the book begins by highlighting that preserves are naturally vegan, with little to no change needed to make them vegan. Understanding how to preserve these fruits and sugars, and how to preserve them for long periods, helps readers appreciate the science and technique behind these delicious preserves.
Something readers will find interesting. It may not be something they think about often: how much preserves are used in other areas of cooking and baking. These flavor bombs let people add delicious butters and syrup to breakfast pastries, make classic sandwiches with jams, and enjoy a distinct, naturally sweet profile, while the scientific knowledge and techniques help readers preserve those flavors.
THE VERDICT
Delicious, engaging, and insightful, Author Nemo’s “Sweet Preserves” is a must-read non-fiction vegan cookbook. It balances technique with delicious recipes and a wide range of preserve styles. The author goes into detail, and readers return to this book time and again for their own preserves, appreciating the work and heart that go into making these products.
